Not sure if this will work for you, but I actually did something similar with my pebble; however it does not require a pebble.I used an xposed module to program an NFC chip to unlock the phone like you said opens the launcher.
I put the NFC chip on the backside of my pebble and then when I tap the pebble it would open the launcher.Depending on the type of watch you have you might be able to do something similar.Although, with xposed not working with lollipop for now, it might not be a great solution.
Other than that phone lock watch smart, I don't think there's currently a way to do what you're talking about.I use Tasker to unlock my phone whenever my moto is within range of the phone and lock it when it is out of range.
